For me my most defining food is soup. No day is to warm, short or busy to use as an excuse for not brewing a cauldron of fresh aromatic soup, try a cuppa right now—-feed your soul.
<You will need—A selection of ultra-fresh crisp vegetables
- 10-15 Cherry tomatoes, halved
- Turnip, chopped.
- 2-3 Celery Stalks, fibers removed, chopped.
- 2 small potatoes, cubed.
- 1-2 carrots, cubed
- 1-2 cloves garlic, chopped.
- 2 Leek Onions.
- 1 TBSP tomato paste
- Vegetable stock cube.
- 2 l water
- knob of butter.
Sear leeks, celery parsley( reserve a little parsley for serving.) for 1 min in a knob of butter. Add all ingredients apart from soup mix (or Barley) to a fair sized stock pot. Bring boil, add Barley. Boil for 20 min until vegetables are tender. Blend half of the mixture in an electric blender. Heat and serve with croutons and a sprinkle of fresh parsley….
