My brother took my mother and I out for lunch yesterday as a belated treat for Mother’s Day.
The ambiance was wonderfully rustic, the food exceptional and of course the company exemplary. The coffee shop cum restaurant, Country Living in the Bryanston shopping centre, is very geared to catering to the tastes of their well heeled clients. The menu is a careful combination of breakfast and lunch-time favorites all given a funky twist by adding a unique signature stamp that presents the food in a novel manner. I was so impressed with the Vol au Vents with their Salmon Rosette and cream cheese filling that I simply had to try to make some myself.
- Store bought Puff Pastry.
- 1 egg yolk mixed with a little clod water
- Pastry brush.
- 2 cookie cutter one about 1.5 cm – 2 cm wider in diameter than the other.(I used a drinking tumbler and a bottle cap.)
Roll out pastry on floured surface. Cut out either 18 circles for a three storey stack or 24 circles for a four storey stack. Using the smaller cutter cut out the centre section from all but six. Brush the cut rounds with egg mixture on one side.
Place the cut out circles onto the base, egg side down. Reserve 6 central cut-outs as lids. Brush the baskets with egg wash. Place on greased baking tray. Bake according to packaging instructions.
